1. Surface-active substances were isolated from the digestive juices of the crayfish Astacus
leptodactylus and the lobster Homarus vulgaris, and purified by extraction procedures and
chromatographic methods. 2. 2. The general structure appears to be fatty acyl-taurine and
fatty acyl-dipeptide respectively. Within the dipeptide the terminal position is mainly taken in
by taurine, but cysteic acid and in addition one or two unidentified amino acids also occur.
The penultimate position is taken in by hydroxyproline.
